History
Beginning in 1903, the predecessor of the restaurant was a food stall selling porridge in late Qing Dynasty (1644-1912) set up by a Hui Chinese from Hebei. The initiator named it as Dong (east) Lai (come) Shun (smooth), in the hope that this stall came from east of Beijing could go smoothly. However, the market where the stall stood was burnt down in 1914 and the stall was destroyed.
After the restoration, the restaurant was set up and instant boiled mutton and other dishes were added on the menu. The cook sliced the mutton into thin pieces and filled them in beautiful plates made of china. Till the 1930 to 1940s, the instant boiled mutton became famous all over Beijing. Today, the chain has hot pot restaurants all over China, well known for fine material, beautiful cutting, spicy flavor, flourishing hotpot, fresh soup, crisp sweet garlic and complete ingredients.
