Water Banquet,is a Chinese set of dishes comprising 8 cold and 16 warm dishes cooked in various broths,gravies,or juices,hence its name.It is considered one of the Three Wonders of Luoyang (an ancient city in the Henan province),along with the peony and the Longmen Grottoes.

The dumpling are made in the shape of crescent moon. This dish originated in this area and is now customary all over China. Tangmian Jiao are famous for their thin wrappings and jade-like color.

Served first in the Water Feast, this is an imperial dish.Yancai is the name given to the unique flavor of Luoyang local dishes.According to legend,when Empress Wu Zetian lived in Luoyang,local farmers presented a huge carrot to the empress because they regarded it as a gift from god.The royal cook cut it into thin shreds,steamed it and mixed it with delicate flavours. This dish was highly praised by Empress Wu Zetian and she gave it the name 'Yanca'.From that time on, Yancai spread in popularity.

Carp Jumping over Dragon Gate (Liyu Yue Long Men) is another famous dish in Yu Cuisine of Henan Province. You may find strange about the name of this dish. After you get some information about this food, you may immediately want to have a taste of it.
